Mom’s Hemp Answer to Sunday Breakfast

Hemp Oatmeal CookieWaking up on a Sunday can be rough on a mother of four and this Sunday was no different. It was early and I was pondering how to feed the little mouths that were about to wake up.  This while peering into an almost bare pantry and fridge.  As I realized I had some solid basic items such as hemp oil,hemp seeds, hemp seed hearts, flour, raw sugar, a few eggs and, OATMEAL.  Oatmeal of all things is not what I was thinking of feeding the kids today and thus the oatmeal cookie breakfast plan was initiated.  This hemp mother’s satisfaction came as I was able to surprise each one of them with a plate of freshly baked oatmeal cookies and watch the smile fracture the morning face from ear to ear.  To all of you hemp mom’s I pass this magical hemp oatmeal cookie recipe on for you to surprise your precious little ones with when they least expect it.

Oatmeal Hemp Breakfast Cookies the easy way

  • 1 1/2 cup organic flour
  • 1 1/2 cup oatmeal
  • 1/2 cup hemp seed hearts
  • 1/2 cup chocolate chips (or something healthy like raisins or, maybe dark chocolate chips… wink wink)
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp sea salt
  • 1 cup butter (well, they are cookies)
  • 1 cup brown sugar (yummy)
  • 1 egg
  • 1 vanilla pod scraped (optional, I just love natural vanilla bean)

Preheat the oven to 350F. First, combine flour, oatmeal, hemp seed, baking powder, baking soda, chocolate chips and salt in bowl. Mix together until all ingredients well combined.  In mixing bowl beat butter. Once butter is beaten well add brown sugar and vanilla, beat on medium until well incorporated. Add egg and mix them together.  Next, gradually add flour mixture into butter mixture on low. The hemp oatmeal cookie dough will be thick, I usually finish off by hand mixing to ensure ingredients are well combined. If one of the kids has woken up early, I have them do the mixing by hand.  Make the hemp cookie dough into golf ball sized chunks and then put them on cookie sheet, slightly squishing them down.
Bake at 350 for 10-12 minutes and enjoy once cooled off enough to eat.
