Banana Hemp Nut Cake made with hemp seeds
9 oz. (1 cup or 3 medium) very ripe bananas
Drys:
- 1/4 cup hulled hemp seeds, toasted
- 5 oz. (1 cup) whole wheat flour
- 3 1/2 oz. (3/4 cup) a.p. flour
- 1 Tbsp. baking powder, less a pinch
- 1/2 tsp. salt
Wets:
- 2 eggs
- 3 oz. (1/3 cup) applesauce
- 5 oz. (2/3 cup) sugar
Preheat oven to 300ºF. Toast the hemp seed if they are not toasted, not over 300ºF. Lightly grease a 9 inch cake pan. Measure and mash the bananas. Mix the drys together (hemp seed, flours, baking powder, and salt). Mix the wets together (eggs, applesauce, and sugar) with a mixer at medium speed until pale yellow. Alternately add the bananas and the drys to the wets, mixing well. Pour into greased cake pan. Bake for 35 minutes at 300ºF, a toothpick should come out clean. Let cool in pan for 20 minutes before turning out onto cooling rack. Note: The amino acids in hemp seed are preserved at when they are cooked at temperatures lower than 300ºF.
